Hi there!

 

This was a strange house with old black
railings all around the garden.

Its large double kitchen window was facing the road.
Although it was so dark, I could see the yellow
road lights shining on the peaceful waters making
circles like searchlights.

There was a soft south wind blowing and I could
hear the waves beating on the rocks.

I could feel the wind through the half-open
window ….. it smelt seaweed!

Here I share with you my today’s dinner recipe.
 
Pork has its own distinctive taste.
It is a meat full of minerals, Choline and Niacin.

Oven Baked Pork Chop

 

Ingredients:

 
1            Organic pork chop
2tbsp   Extra virgin olive oil
2tbsp   Water
               Mixed red spices (paprika, cayenne, chilli, garlic)
               Mixed dried herbs
 

Preparation:

 
1)  Place the pork chop in an ovenproof dish with the water and 1 tbsp olive oil.
 
2)  Sprinkle the spices and herbs on top of the chop.
 
3)  Cook until golden on top.
 
4)  Remove from the oven, turn the chop and sprinkle again with the herbs and spices,
and 1tbsp oil.
 
5)  Put back in the oven and cook for another 10 minutes.
 

In the meantime, make this very picant sauce (my recipe) :

 
Mix well in a bowl,
2tbsp   light ketchup
1tsp      wholegrain mustard
1tbsp    organic apple cider vinegar
1tbsp    extra virgin olive oil
 

Accompaniments:

Cauliflower

Spiced Rice

Ingredients:

 

1)  50gr     Wholegrain rice
2)  1             Red onion chopped
3)                 Mixed dried herbs
4)                 Fleur de sel
5)  2tbsp   Extra virgin olive oil
6)  1             Baby cauliflower
 

Preparation:

 
1)  Boil the rice for 15 minutes.
 
2)  Put the oil in a non stick frying pan and saute the onion lightly.
 
3)  Strain the rice and put it in the frying pan with the onion.
 
4)  Sprinkle dried herbs and fleur de sel.
 
5)  Mix well and fry for 1 minute.
 
6)  Place cauliflower in a microwave steam bag and steam for 3 minutes.

 

To Serve:

 
1)  Place the chop in a dinner plate.
 
2)  Decorate the sauce around it.

3)  Put the rice in a small glass and turn the glass in the middle of a side plate.
 
4)  Cut the baby cauliflower in 4 pieces and place around the glass.
 
5)  Remove glass and decorate between the cauliflower pieces with the remaining sauce.
